A simple but vibrant traybake for two- the creamy, bright orange sauce lifts the dish with citrus and paprika flavours
- 2 chicken legs
- 1 tbsp olive oil, plus 1 tsp for the sauce
- 6 carrots, cut into long chunky pieces
- 2 large beetroot, cut into wedges
- 1 shallot, finely chopped
- 1 tbsp poppy seeds
- 1 tsp sweet paprika
- 200ml chicken stock (made from ½ a stock cube)
- 1 tbsp clear honey
- zest 1 lemon, plus juice of ½
- 150ml pot soured cream
- ½ small pack parsley
MethodPut the chicken on a large baking tray, drizzle with 1 tsp oil and season well. Cook for 20 mins.
- 1½ kg medium chicken
- 6 lemons, halved
- 4 rosemary sprigs
- 2 onions, quartered
- 9 garlic cloves
- 1 tbsp thyme leaves, chopped
- 2 tbsp olive oil
- 500g baby new potatoes, halved
- 3 lemon thyme sprigs
- Heat oven to 190C/170C fan/gas 5. Stuff the chicken cavity with 2 lemon halves, 2 rosemary sprigs, 4 onion quarters and some seasoning. Put the chicken into a large roasting tray.
- Crush 3 garlic cloves, then add to a small bowl with the thyme leaves and olive oil, mix, then rub this all over the chicken with some seasoning.
- Arrange the potatoes around the chicken with the rest of the lemons and onions, rosemary and whole garlic cloves, and lemon thyme. Cook in the oven for 1 hr 20 mins, turning the potatoes in the pan once or twice. To check if the chicken is cooked, pierce the thigh with a skewer and the juices should run clear.
- Remove the chicken from the tray and place on a serving dish or board to rest for 15-20 mins. As you lift the chicken, let any juices pour back into the tray. Increase oven temperature to 200C/ 180C fan/gas 6 and cook the potatoes for a further 10-15 mins or until tender.
- If you want gravy, use a slotted spoon to remove the potatoes from the tray to a serving bowl, then use a potato masher to mash all the juices, lemons, herbs and garlic together in the roasting tray, adding a splash of water if it’s too pulpy. Push this mix through a sieve, taste the gravy and add some more seasoning if you need to. Bring everything into the garden so everyone can help themselves.
- 500g strong white bread flour
- 7g sachet easy-bake dried yeast (or 2 tsp Quick dried yeast)
- 1½ tsp salt
- 1 tbsp soft butter
- 1 tbsp sunflower seeds
- 1 tbsp each of sesame and poppy seeds, plus extra for sprinkling
- Mix the flour, yeast and salt in a large mixing bowl. Put in the butter and rub it into the flour. Mix in the seeds. Make a dip in the centre of the flour and pour in almost 300ml hand warm (cool rather than hot) water, with a round-bladed knife. Then mix in enough of the remaining water and a bit more if needed, to gather up any dry bits in the bottom of the bowl, until the mixture comes together as a soft, not too sticky, dough. Gather it into a ball with your hands.
- Put the dough onto a very lightly floured surface and knead for 8-10 mins until it feels smooth and elastic, only adding the minimum of extra flour if necessary to prevent the dough sticking. Place the ball of dough on a lightly floured work surface. Cover with an upturned, clean, large glass bowl and leave for 45 mins-1 hr or until doubled in size and feels light and springy. Timing will depend on the warmth of the room.
- Knock back the dough by gently kneading just 3-4 times. You only want to knock out any large air bubbles, so too much handling now will lose the dough’s lightness. Shape into a ball, then cover and leave for 10 mins.
- Shape by flattening the dough into a rectangle about 25 x 19cm using your knuckles. Fold both shorter ends into the centre like an envelope, make a ¼ turn, then flatten again into the same size and roll up very tightly, starting from one of the short ends. Seal both ends by pressing down firmly with the side of your hand. Lay the loaf on a baking parchment-lined baking sheet with the join underneath. Using a very sharp knife, make 7-8 diagonal slashes down the length of the loaf, deep enough to open up slightly. Cover and leave for 40-45 mins, or until about doubled in size. Finish by brushing between slashes with water, then sprinkling with alternate lines of seeds.
- Put a roasting tin in the bottom of the oven 20 mins before ready to bake and heat oven to 230C/210C fan/gas 8. Put the risen bread in the oven, carefully pour about 250ml cold water into the roasting tin (this will hiss and create a burst of steam to give you a crisp crust), then lower the heat to 220C/200C fan/gas 7. Bake for 30-35 mins or until golden. Remove and cool on a wire rack. If you tap the underneath of the loaf if should be firm and sound hollow.
- 1 tbsp vegetable oil
- 1 onion, chopped
- 1 garlic clove, crushed
- 350g risotto rice
- 1 small glass white wine
- 1l hot stock
- 2 chicken breasts from the roast chicken, chopped
- 1 tbsp thyme leaf
- 200g frozen peas
- 1 tbsp crème fraîche
- 2 tbsp grated Parmesan, plus extra to serve
- Heat oil in a large pan and cook the onion and garlic for 5 mins. Stir in the rice and cook for 1 min more, until it starts to look transparent. Pour in the wine and keep stirring until all the liquid is absorbed.
- Add the stock and simmer until the rice is just tender. Stir through the chicken, thyme and peas, then cook for 2 mins or until the chicken is warmed through. Add the crème fraîche and Parmesan with some seasoning, then remove from the heat. Cover with a lid and leave to stand for 2 mins before serving with extra Parmesan, if you like.
