You can rustle up these crispy bites with a few storecupboard ingredients - sparkling water is the key to a really light batter

Ingredients

  • 1 large onion, cut into 1cm slices, rings separated
  • groundnut oil, for deep frying
  • 150g self-raising flour
  • 180ml sparkling water

Method

Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
  • Heat the oil to 180C in a heavy-based pan – it should be no more than 1/ 3 full.
  • Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
  • Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes. Remove with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter.

    1. Heat oven to 200C/180C fan/gas 6. Put the flour in a large sealable plastic bag. Season, then tip in the onion and shake well. Whisk the egg whites until foamy, add the onions and stir to coat.
    2. Lightly oil a baking sheet. Add the seasoning and breadcrumbs to the bag; then, working in batches, add the eggy onion rings and coat in the crumbs. Arrange onion rings, in a single layer, on the baking sheet and cook for 25-30 mins, turning halfway through, until the onion is tender and the crumbs are golden.

    Method

    1. Put the onions in a large bowl, pour over the buttermilk and cover with cling film. Leave to soak at room temperature for 30 mins-1 hr.
    2. Put 100g of the plain flour on a large plate and stir in the cayenne with a little seasoning. Drain the onion rings, then coat in the seasoned flour.
    3. Half-fill a large saucepan with the oil and heat until it reaches 180C on a probe thermometer (or until a piece of bread crisps in 20-30 secs) or heat a deep fat fryer to 180C. Make the batter by combining the remaining plain flour with the cornflour and a pinch of salt. Make a well in the centre and pour in the lager. Stir to combine until smooth.
    4. Dip each onion ring in the batter and fry for 3-4 mins or until crisp. Drain on kitchen paper and sprinkle with the salt.

    Method

    1. Heat oven to 200C/180C fan/gas 6. Toss the sweet potatoes with 2 tsp of the oil, half the oregano and some seasoning, and arrange in a single layer on a flat baking tray lined with baking parchment.
    2. Put 1 tsp of the oil into a food bag with seasoning, add the onion rings and shake to coat. Add the polenta and shake again. Arrange on another tray and cook with the fries for 35 mins, turning halfway.
    3. Mix the remaining oil, the parsley, lemon zest and juice, garlic, vinegar and oregano with seasoning, and brush half over the steaks. Pan-fry for 30 secs each side, serve with fries, onion rings and remaining dressing.
