Grease a baking sheet; set aside. In a medium bowl stir together the cheese, pizza sauce, pineapple, and ham; set aside.
  • Divide dough into 8 pieces. On a lightly floured surface roll and stretch each piece to a 6x3-inch rectangle. Place a well-rounded tablespoon of cheese mixture on one side of each rectangle. Fold the unfilled side of dough over the filling; seal well, pressing edges with the tines of a fork. Prick tops of pockets with the fork. Arrange on prepared baking sheet. Brush each with olive oil.
  • Bake about 15 minutes or until golden. Serve warm.
  • To freeze, place unbaked pockets on a baking sheet. Cover with plastic wrap and freeze for 1 hour. Place in an airtight freezer container and freeze up to 3 months. Bake as above, baking for 18 to 20 minutes in the preheated oven.

    These pastries will be a hit with everyone. Make them vegetarian by leaving out the pepperoni and adding a pinch of chilli flakes for a similar spicy kick

    1. Heat oven to 200C/180C fan/ gas 6. Heat the oil in a saucepan, add the garlic and oregano, and cook for 1 min until fragrant. Stir in the tomatoes and tomato purée, and cook over a high heat for about 5 mins until thickened.
    2. Unroll the pastry, cut each sheet into quarters, and arrange on two baking trays. Spread a little of the tomato sauce over half of each quarter, keeping a border about 0.5cm around the edge. Top with the cheese, followed by the pepperoni and olives (this keeps the cheese from sticking to the top of the pastry as it melts). Brush the edges with egg and fold over the uncovered half of the pastry, pressing down the edges with a fork to seal. If you have time, leave the pockets in the fridge for at least 15 mins to firm up.
    3. Before baking, make a hole in the top of the pockets and brush with a little more egg. Bake for 20 mins or until golden.

    1. In a medium skillet, cook sausage and mushrooms until sausage is brown, breaking up sausage with a wooden spoon as it cooks. Drain off fat; cool slightly.
    2. In a medium bowl, stir together cream cheese and the 1/4 cup Parmesan cheese. Stir in sausage mixture.
    3. Preheat oven to 425 degrees F. Lightly grease two large baking sheets; set aside. On a lightly floured surface, unroll each package of pizza dough. If necessary, gently stretch each dough piece into a 12x9-inch rectangle. Using a sharp knife or pizza cutter, cut each rectangle into twelve 3-inch squares. Place about 1 tablespoon of the sausage-cheese mixture in the center of each square. Fold dough over sausage-cheese mixture, forming triangles. Press the triangle edges with the tines of a fork to seal. Place the triangle pockets on the prepared baking sheets. Prick each top a few times with the fork tines.
    4. In a small bowl, stir together egg and water. Brush tops of pockets with egg mixture, and if desired, sprinkle with additional Parmesan cheese. Bake about 12 minutes or until pockets are golden. Serve warm. If desired, serve with pizza sauce. Makes 24 pockets.

    1. Preheat oven with pizza stone to 500 degrees F (or tap "Cook's Tip" with Pizza Dough recipe.
    2. For crusts, evenly divide dough in two pieces. Thinly stretch each piece and dust with flour. Bake crusts 6 to 8 minutes or until firm with no browning. Let crusts stand to cool.
    3. In a small bowl mix mascarpone with powdered sugar and vanilla paste. Divide between two crusts; smearing evenly to edges.
    4. Core and finely slice apples. Place slices in large bowl. Sprinkle slices with lemon juice; toss to coat.
    5. For Streusel Topping, in a medium bowl combine the flour, brown sugar, cinnamon and salt. Cut in butter until crumbly. Stir in pecans. Evenly spread apples then topping on cheese layer.Bake each pizza for 10 to 12 minutes.
    6. Combine caramel sauce with a pinch of sea salt. Remove pizzas from oven. Drizzle with caramel sauce. Generously sprinkle with powdered sugar. Makes 2 pizzas (about 16 servings).
