Method

Put the flours and oatmeal into a bowl and rub in the butter. Stir in the cheese. Add the egg yolk and mix in using a fork. When the mixture starts to clump together, use your hands to knead to a smooth dough.
  • Place the dough between two sheets of baking parchment and roll out thinly to about 1/2cm. Cut out desired shapes and lift them using a palette knife onto a non-stick baking sheet. Reroll any trimmings and cut out more shapes. Bake in the oven for 12–14 mins until golden brown. Leave on the tray for a few minutes to firm up before removing to a cooling rack.
  • Alternatively, take walnut-sized pieces of dough, roll into balls and place on the baking tray. Flatten slightly with a fork and bake as before.

    Ingredients

    • 1cup all-purpose flour
    • 1/2 cup white whole wheat flour or whole wheat flour
    • 2teaspoons baking powder
    • 1teaspoon snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
    • 2 clovesgarlic, minced
    • 1/4 teaspoon cream of tartar
    • 1/8 teaspoon salt
    • 2ounces reduced-fat cream cheese, cut up
    • 2tablespoons butter, cut up
    • 1/4 cup finely shredded Monterey Jack cheese (1 ounce)
    • 1/2 cup fat-free milk

    Method

    1. Preheat oven to 450 degrees F. In a medium bowl stir together all-purpose flour, whole wheat flour, baking powder, thyme, garlic, cream of tartar, and salt. Using a pastry blender, cut in cream cheese and butter until mixture resembles coarse crumbs. Stir in 3 tablespoons of the Monterey Jack cheese. Make a well in the center of the flour mixture. Add milk all at once; stir just until dough clings together.
    2. Turn out dough on a lightly floured surface. Knead by folding and gently pressing dough for four to six strokes or until nearly smooth. Pat or lightly roll dough into an 8x6-inch rectangle.
    3. Cut dough into eight rectangles. Sprinkle tops with the remaining 1 tablespoon Monterey Jack cheese. Place rectangles 1 inch apart on an ungreased baking sheet lined with parchment paper. Bake for 8 to 10 minutes or until golden brown. Serve warm. Place the remaining biscuits in a freezer bag and freeze for up to 3 months.

    • 2ounces soft goat cheese (chevre) or reduced-fat cream cheese (Neufchatel)

    1. Preheat oven to 450 degrees F. In a medium bowl stir together all-purpose flour, whole wheat flour, basil, baking powder, garlic, cream of tartar, and salt.     Ingredients

    • 2 cups bleached all-purpose flour
    • 1 tablespoon baking powder
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 6 tablespoons (3/4 stick) butter, cut into small pieces
    • 1/2 cup chopped baked Virginia ham (about 2 ounces)
    • 3/4 cup coarsely shredded Cheddar cheese (about 3 ounces)
    • 3/4 cup buttermilk

    Method

    1. Heat oven to 425 degrees F.
    2. Sift flour, baking powder, baking soda and salt into large bowl. Using pastry blender, cut butter into flour mixture until it resembles texture of oatmeal. Stir in ham and 1/2 cup cheese. Stir in buttermilk just until mixed; do not overmix; gather together into dough.
    3. On lightly floured surface, roll out dough to 3/4-inch thickness. Cut out dough with 2-1/2-inch biscuit cutter. Place biscuits on ungreased baking sheet. Gather up scraps; roll out once more and cut out additional biscuits; you should have total of 12. Discard trimmings. Sprinkle with remaining cheese.
    4. Bake in 425 degrees F oven for 12 to 15 minutes or until golden brown. Serve warm or at room temperature.
